Hummingbird Cake

Ingredients
  

  • 3 c all-purpose flour
  • 1 1/4 c sugar
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 eggs, beaten
  • 3/4 c oil (I substitute unsweetened applesauce)
  • 1 1/2 tsp vanilla extract
  • 1 8 oz. can crushed pineapple
  • 2 c chopped bananas
  • 1 c chopped pecans
  • 1 c rasins

Method
 

  1. Combine flour, sugar, soda and salt: mix well.
  2. Add eggs and oil (or applesauce) stirring just until moistened
  3. Stir in Vanilla, pineapple, pecans, bananas and raisins
  4. Spoon into 3 greased and floured cake pans
  5. Bake at 350° for 20-30 minutes
  6. Cool in pans 10 minutes then remove to wire racks to cool completely
  7. Spread frosting between layers, over top and sides.
  8. Garnish with chopped pecans
Frosting
  1. Combine 1/2 c softened butter, 16 oz softened cream cheese, 1 tsp vanilla extract and about 3/4 pound of confectioners sugar
