Hi everyone! I’m over on my channel sharing a favorite, and super easy, fall recipe we love using things from our garden🙂 This is so customizable – you can use any variety of chicken or veggies you like.

Ingredients
Method
- Marinate Chicken overnight with seasonings of choice. (I used avocado oil, apple cider vinegar, garlic powder, onion powder, Tony Chachere's Creole, Thyme, Sage)
- Peel and chop butternut squash into about 1" pieces
- Scrub and chop potatoes into about 1" pieces
- Peel and cut onion into strips
- Add vegetables to large bowl and drizzle olive or avocado oil, spices and mix
- Line large baking sheet with parchment paper and add vegetables in a single layer
- Place marinated chicken on top of veggies and sprinkle with kosher salt
- Bake at 400° for 40 minutes

This sounds delicious. We love butternut squash and brussels sprouts, and it’s fun to try something new with them (roasted fall/winter vegetables are so tasty) I went to a pizza place in Phoenix last year and they had a butternut squash/shredded brussels sprouts pizza that was to die for! I don’t remember what kind of cheese they used on it, but I’d love to try to recreate it sometime. Happy Fall!
