Spicy Refrigerator Dill Pickles

This is the easiest and also my favorite refrigerator dill pickle recipe! Be sure to check out the video to see me making them!

Spicy Refrigerator Dill Pickles

Ingredients
  

  • 1 1/4 cup distilled White vinegar (5% acidity)
  • 3 Tbsp Kosher Salt
  • 2 cups Cold water
  • 2 lbs cucumbers (as fresh as possible)
  • 1 tsp Mustard seeds
  • 1/4 tsp red pepper flakes
  • Dill sprigs
  • hot pepper slices of choice, or two small cayenne peppers
  • 6 garlic cloves peeled

Method
 

  1. Combine vinegar and salt in a saucepan(non-reactive - stainless steel, glass, ceramic) over high heat. Whisk until salt is dissolved. Transfer into bowl and whisk in the cold water. Refrigerate until ready to use
  2. Fill two 1-quart jars with cucumbers. Add mustard seeds, garlic cloves, red pepper flakes, dill sprigs and sliced peppers dividing equally.
  3. Pour chilled brine into jars divided equally.
  4. Cover and refrigerate about 24 hours. Will last a month in the fridge, but mine have always lasted for several months. Use your own discretion.
